Hello everyone, I work at an Italian-inspired restaurant in North America and I would like any kind of help anyone would be willing to give me about lamb rack.
For the last few years, anytime we would get rack of lamb I would cut it into chops and serve it in the style of lamb scottadito. Recently our manager has decided that doesn't sell well enough for the cost we have to run it for and would prefer to sell it as sections of rack. Hello! My family is traveling to Italy in a few weeks. We are staying at Lake Como, but my partner and I are going to take a day-trip to Bologna for a food tour (I'm sooo excited). We are taking the train. The tour lasts until about 14:00. After the food tour, we plan to spend a little time exploring Bologna, then we are planning to swing by Parma for a couple hours on the way back.

I love chili oils and my favorite so far is Calabrian chili oil. I’ve just finished yet another bottle of tutto calabria and I was curious if anyone had any suggestions for any other types of Italian chili oil or even just another brand to try?
I’m in the US but near a great Italian grocer and happy to order something online.

Qual è la miglior combinazione di ingredienti per dire “è buona”?
Non l’ho mai mangiata, mi ha attirato un pacchetto colorato e l’ho comprata. Stavo pensando di portarla in ufficio con tonno, peperoni al forno, olio, sale e pepe.
Cosa potrei aggiungere per non renderla un’insalata troppo secca? Ha senso aggiungerci del riso visto che non è un cereale?
