Hello everyone, I work at an Italian-inspired restaurant in North America and I would like any kind of help anyone would be willing to give me about lamb rack. For the last few years, anytime we would get rack of lamb I would cut it into chops and serve it in the style of lamb scottadito. Recently our manager has decided that doesn't sell well enough for the cost we have to run it for and would prefer to sell it as sections of rack. Hello! My family is traveling to Italy in a few weeks. We are staying at Lake Como, but my partner and I are going to take a day-trip to Bologna for a food tour (I'm sooo excited).
