In January 2020, Utah Food Services became the first organization in North America to certify on the Gold Level through the Events Industry Council’s Sustainable Events Standard. Making lists, checking them twice (or a zillion times), loading, unloading, and reloading the sleigh (box trucks, cargo vans, mobile kitchens, etc.) while visions of sugar plums dance (or more like jolts of panic strike as you rack your brain to the whereabouts of the Sugar Plum Fairy Cake) are just some of the joys of a holiday caterer.
