I like big cookies and I cannot lie. The bigger the better seems to be the way to go with cookies and these Bakery Style Peanut Butter Cookies are no exception. Baking around the holidays is extra special to me since it’s a tradition that I remember all the way back to being a little kid baking in my Grandma’s kitchen. She would have multiple mixers out and everyone in the family was involved in the production of dozens upon dozens of holiday cookies to make cookie trays for friends, family and Christmas Day. My Grandpa was in charge of putting sprinkles on top of the Italian wedding cookies, while my Grandma perfected the timing of her Italian pizelles on the waffle iron. Just in the (jolly ol’ saint) nick of time, I’ve got one more holiday favorite for you. Whether you call them Magic Cookie Bars or Seven Layer Bars, these have been my all-time favorite cookie since I was a little kid. I love all of the flavors. I love how easy they are to make. Cookies are the reason for the season this year. There are a lot of things we can’t enjoy, but we can eat our weight in cookies with no regrets. Calories don’t count in 2020, in case you hadn’t gotten the memo. Stretch pants are in, and the days of business skirts and heels are out. If my work expects me to be rocking anything fitted when we return to an office, I expect at least a six month advance notice – and some flexibility in the dress code. Baking Christmas cookies is a tradition that I learned at a very early age from my Grandma and mom. Every Christmas, my mom and Grandma would get their mixers together and just crank out trays and trays of delicious holiday cookies. Italian wedding cookies, pignolis and Italian Pizzelles were three of the cookies that my Grandma would always make. Even with the lack of holiday parties this year, we could all use a healthy meal to counteract all the sugar being consumed. I’m all about easy dinners that are packed with flavors and don’t require tons of ingredients to make.
