Hello and happy Friday! We’ve made it through the week and are now onto the glorious weekend Per usual (and very intentionally) we don’t have much going on for weekend plans. We have a BBQ at our neighbors house and I’m taking an herbal tincture making class near me that I am VERY excited about. But that’s it In this week’s Life of a T1D Blogger post I wanted to share what a week of our meals looked like. Meal planning has helped me on SO many levels. It helps me: make good food choices eat dinner at a reasonable hour eat seasonally waste less and it takes out that last-minute/end-of-the-da ..read more

This burger salad recipe is a new favorite of ours! It’s a fibrous twist on a summer classic. It’s great if you’re trying to limit bread or processes starches because it uses potatoes (in the form of fries – that you’re going to make) for the carbs. This whole thing whips together in just 35 minutes! Ingredients This recipe has three main parts: Fries Salad Dressing Fries The homemade French fries consist of: Potatoes Coconut Oil Salt & Pepper Garlic Powder Nutritional Yeast (optional, but adds GREAT flavor!) Salad Lettuce Ground Beef (seasoned with salt, pepper, and garlic powde ..read more

Mounting evidence is showing that insulin CAN withstand high temperatures. It doesn’t need to be as cold as we’ve been told. Gone are the days of wondering: Shoot! I left my insulin in the hot car or the sun… Is my insulin still good? Should I throw it away? Will my insulin work if it got warm?   The Old Song and Dance In my early days of diabetes not only did I refrigerate my unopened insulin BUT ALSO my OPENED insulin. That’s right, my opened insulin was either in the fridge or in a supply case with an ice pack… at all times That’s because I was told to do so. Insulin had to be cold. If ..read more

Happy Friday! Last week I saw a really fun post from one of my favorite lifestyle bloggers, Peanut Butter Fingers. It was a “A Picture an Hour” blog post, and I wanted to try it out! Yesterday I set a timer on my phone to take a picture every hour. Here are the pictures I took… 1 Photo an Hour 6AM: I have been starting my mornings off by walking 30 minutes before I do anything. Before eating, before reading, before working. I work a desk job 9-5 so getting in as much movement throughout the day is my MO. 7AM: After walking Miles and I fed the animals and let the chickens out of their c ..read more
