Here's an easy cilantro lime chicken meatball no-recipe, recipe. (No recipe because I just threw this together using a base meatball recipe from the New York Times.) This a gently spiced, juicy, meatball. The fresh herbs are fab and the lime juice gives it's a subtle hit of acid. The meatball itself is super soft so the meatballs are less ball-shaped, more a dollop but still yum. Cilantro Lime Chicken Meatball Recipe Yields approximately 12-16 meatballs (depending on how you scoop) 1 pound Bell & Evans ground chicken breast 1 handful fresh cilantro - chopped 1/4 red onion - minced 2 ..read more

The NYC-based food allergy counselor was so dissatisfied with the resources available to people like her that she published her own guide, "Allergic Girl: Adventures in Living Well with Food Allergies," in 2011 to help others manage the daunting act of eating out. “While I was busy being a young adult, all of these national nonprofits had sprouted up for children, but no one was discussing how to live well and communicate effectively with life-threatening food allergies as an adult,” Miller said. “Because I’ve lived with food allergies my entire life and have been dining out my entire li ..read more

Tea and scones, who doesn't love that? One of my favorite brands of allergen-free mixes, Namaste Foods, has a Scone & Muffin mix that I hadn't yet tried but I did this past week and made these beauties. They have a muffin-y texture and taste, already sweetened they don't need much more but a sprinkle or sugar on top, see below, or cinnamon sugar as pictured above. The trick here is to NOT over-mix the dough, which means, at least to me, to under-mix the wet and dry ingredients in the bowl and then finish combining the dough on your cookie sheet, form your desired scones, and bake ..read more
