Usually Pad Thai is my go-to dish because (if it's made correctly) it's naturally gluten-free. This particular restaurant I'd eaten at before and was fine. They even label Pad Thai as gluten free on their menu. Last night I picked up takeout from them and went to my friend's house to watch a movie. I opened the container and thought, "Those... don't look like the same noodles," but convinced myself that they were a different shape of rice noodles. I'm 62. In the past I have tried different diets for mental and physical health, including strict AIP for 60 days, being vegan, and various other elimination diets (including cutting out gluten for periods of time). I have never noticed any difference in any of my symptoms from dietary changes. I've never had any GI symptoms either. The past year has been rough and I've had severe depression. So very new to gluten free here! At least at my house it’s only part time but my daughter (who has her own apartment) has been having some severe stomach and skin issues for a while now and just 2 days after her switching to totally gluten free she started seeing a huge difference! We are waiting on the results of her celiac panel but considering all the testing they’ve done over the last 4 months and the relief she got after just 2 days her gp is certain that if it’s not celiac it’s at least a pretty severe gluten allergy and advised her to go on and start on a gluten free diet since no matt ..read more

I was diagnosed about 10 years ago via positive blood test and started a strict gluten free diet on my doctors recommendation. Several months later I was able to get in with a GI doctor who did an endoscopy but, as expected, it was negative because I had spent months gluten free. I’ve kept up a gluten free diet ever since and my symptoms have generally been good, apart from a few times where I believe my food was cross contaminated and I had an awful reaction. If you’re GF/DF I highly recommend. The cheesy flavor could be a little stronger, but the crunch of these is perfect, they’re a good size, and they’re super tasty. New favorite for me.
