Hi everyone. I have severe non-celiac gluten sensitivity. I am a night and day person when my body is not reacting to gluten. My main symptoms are severe intenstinal cramping, diarrhea, inflammation and joint pain, depression and anxiety, and fatigue. When gluten-free, all of these symptoms are relieved and I feel amazing. I have IBS and gastroparesis and can't have any corn and do not do well with high fiber flours such as lentil flour or any seed flours. I tried making a 500 g blend made of 45% potato starch, 45% rice flour and 10% oat flour. I tried making pizza dough, added a tea spoon of xantangum, but this took a very long time to cook in the oven, maybe 45 min and the crust gets hard on the outside but when I bite into the dough it is still a bit raw on the inside. I have a grain allergy and never been tested for celiac. I ate a mini bagel with gluten cutter on Saturday and I have been having horrible symptoms since. Vomiting, diarrhea, constipation, stomach cramps, nausea, belching, very bad heartburn. Can symptoms last this long? I thought i was getting better but today the symptoms hit me hard again. Howdy. I found out last year after enduring years of gastrointestinal issues and chronic debilitating stomach pain daily that I'm intolerant to a long list of vegetables and fruits (I just cut out everything in my diet and reintroduced them) . I cut those out and had some relief. However, I noticed since I switched from a low carb diet (involuntarily gluten free) to a low calorie diet I've been bloated a lot.
