Perfect soft and fruity carrot cake muffins. They have a lovely balance with the carrots, mixed fruit, ground almonds and crunchy walnuts. Delicious and perfect for breakfast, treat or snack. Do you have any leftover parsnips? If you do then this squidgy chai spiced parsnip cake is for you. If you haven’t then go get some! This cake is worth it! I love this cake – its sticky with treacle and spiced with ginger, all spice, cinnamon and cloves. The glazed with a zingy lemon drizzle. Well this is a bit of a stunner of a festive treat! Star bread filled with layers of sweet dark cherry jam and mincemeat – like a festive version of sharable chelsea bun. I know it looks a little complex to make – but i promise its not. Be warned these are completely addictive! It’s incredible just how delicious these little squares are considering the simple ingredients.  Just oats blitzed to a flour, blended with gooey sweet dates then topped with chocolate with a tahini swirl. I used beautiful sweet and runny tahini which works perfectly. If you have more solid tahini you can add a little melted coconut oil or maple syrup if you’d like it a bit sweeter. As you all know, I definitely have more of a savoury tooth than a sweet one. But when I do get that craving – I get it hard. And this Orange and Almond cake definitely ticks all the boxes for me. It’s sweet, but not overpowering due to the mixture of acidic oils which helps to not only keep the cake moist but keeps it from being too sugary. I made this as a healthy and delicious snack at the weekend so I could take a batch with me to Wales on a huge run/walk along the Welsh coastal Path between Aberdovey and Barmouth. It was 21 miles in total and stunningly beautiful – starting on the windswept beach, then ascending into patchwork hills and valleys. Exhausting but completely invigorating, and these little blondies were the perfect fuel along the way.
