These Strawberry Cheesecake Cookies are a variation on one of my favourite cookie recipes of all time. Just picture: a tender, soft cookie baked to enclose a delicious strawberry cheesecake filling. To me, Easter is a special time of year. I always feel the transition of seasons strongly in April. Summer is transitioning into shorter, cooler autumn days. Mangoes and peaches are out, but apples and pears are now in season. This new season coziness just makes me want to get in the kitchen and bake. This Blood Orange and Cranberry Loaf Cake is the perfect afternoon tea cake. It’s full of citrus flavour, loaded with tart cranberries and drizzled with a sweet pink glaze. We’re currently in the transition between winter and spring. We’ve had some lovely warm, sunny days, which feel lush. But thanks to La Niña today is feeling like winter again. That being said, I’m getting a lot of inspiration seeing fall recipes posted by Northern Hemisphere friends on Instagram. The idea for this Apple Crumble Filo Pie was kicking around in my brain for literally months before I decided to make it for a weekend girls lunch. And what do you know – it turned out even better than I had hoped! Imagine a headily spiced apple pie with a crumble topping – sounds good, but nothing revolutionary here.
