When the quarantine thing became, well, a thing, I never thought it would last this long. My last day of work was March 15th and I remember saying to my coworkers, “I bet everything will shut down for maybe a week - two tops - so they can figure everything out and then we’ll open back up again'“ HA. How’s everyone doing? I’m doing alright. Been doing some home renos, baking some bread, reading a good book. All in all, not too different than my usual life. I think this has lasted longer than anyone expected and it’s going to stay this way for the foreseeable future - Canada is saying the social distancing restrictions will stay in place until May at least, possibly into the summer as well. Hybrid sourdough? What’re we doing here, crossing a tiger and a lion? Nope, a hybrid sourdough is a dough that uses both natural yeast from a starter as well as commercial yeast.
