A delightfully sweet one pan strawberry and almond slice that is low in carbs and free from gluten and grains too. This is a great source of protein and perfect for slicing and sharing with your family and friends. It certainly satisfies a sweet tooth.

This low carb, gluten free blueberry and vanilla mug cake is currently a firm family favourite.
I regularly see delicious looking mug cakes on social media and think how wonderful, simple and quick they look to make. But then when inspecting the ingredients I quickly realise that my blood sugars just don’t do well with grains + sugars. This low carb chocolate mousse cake is for any day, any time, any occasion. It is simple to make with easy to source ingredients. It is rich, decadent, indulgent and makes the most incredible centrepiece. I have been wanting to write The Low Carb Baking Bible for a very long time. Then a few weeks ago I started gathering all the recipes scribbled on the backs of envelopes and receipts and started testing them. Trialling them on my trusty (and brutally honest) taste testers and typing them into a legible format. Probably not the greatest of times, given everyone is trying to keep their ovens turned off. Having stable blood sugars is something many people living with diabetes dream of. Not having to think about the carbs in foods; being able to be spontaneous and just indulge in delicious treats or drinks without so much as a second thought. But, as a type one diabetic (of 17 years), not giving the food I eat a second thought is impossible.

With Easter fast approaching I thought it was time to share one of my favourite baked chocolate cheesecake recipes. This really is a showstopper. It has a beautiful consistency, rich and chocolatey, sweet but not too much and probably the most simple ingredients for any base you will find.
Low in carbs, grain free and gluten free. Make it the evening before it is needed as you need plenty of time for it to chill in the fridge.

My goal, as a recipe developer is always to create recipes that are as close to the “real thing” as possible! A delicious and simple roasted vegetable quiche with a cheddar crust. Quiche is such a brilliant way to use up any leftover vegetables, especially at the end of the week when food provisions are looking a little depleted. It is filling and great for lunch or dinner. It can be sliced and enjoyed on the go, served at a picnic or a family lunch. You can choose whatever roasted vegetables you want. I find red onion, pepper, broccoli and courgette to be a great mixture. I am going to be very honest with you.
An email popped in to my inbox earlier this week, which I want to talk about. For some context, I receive between 60-70 emails a week and many more than that on social media, asking for advice, questions, tips, recipe locations etc….. I respond as quickly as I can. It has been harder and I have been a little slower over the last 6 months with a new baby but I work as fast as I can to get back to people.
