Making meatloaf in a standard muffin tin cup is a great way to help with portion control, and you know what a serving size is. 2 of these mini meatloaves are 4 points and only 276 calories. These meatloaves are great with a side of mashed potatoes and green beans. I used 96% lean ground beef to make these mini meatloaves but you could definitely use fat-free ground turkey to make them fewer points. I tried Alton Brown’s chocolate chip cookie recipe “The Chewy” and it was a challenging cookie recipe to make. First of all, his recipe has everything measured in ounces so it requires a lot of measuring and the use of a food scale. If you don’t have a food scale yet, why not?
