I am so lucky to have neighbours with overflowing zucchini harvests! They’re keeping me in the zucchini business and I love it! One of my favourite ways to use zucchini is to cut it into chunks and freeze it, then I add the frozen chunks to our smoothies. No one knows because you can’t taste the zucchini at all! How good do these look? They taste just as good, if not better! I created them for my boys! Pete usually gets home from work starving! Callum gets home from anywhere and everywhere starving.
